Ingredients:

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound tomatillos, husked and chopped
  • 2-3 green chilies (such as poblano or Anaheim), seeded and chopped
  • 1 jalapeño, seeded and chopped (optional, for extra heat)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)
  • Juice of 1 lime
  • Warm tortillas, rice, or beans for serving

Instructions:

  1. Sear the Pork:
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the pork cubes and sear them on all sides until browned. Work in batches if necessary to avoid overcrowding the pot. Remove the pork from the pot and set aside.
  2. Sauté the Aromatics:
    • In the same pot, add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add the Tomatillos and Chilies:
    • Stir in the chopped tomatillos, green chilies, and jalapeño (if using). Cook for 5-7 minutes, stirring occasionally, until the tomatillos soften and start to break down.
  4. Season and Simmer:
    • Add the cumin, oregano, coriander, smoked paprika, salt, and pepper to the pot. Stir to combine, then return the seared pork to the pot. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 1 1/2 to 2 hours, or until the pork is tender and the flavors have melded together.
  5. Finish the Dish:
    • Stir in the chopped cilantro and lime juice. Adjust seasoning with additional salt and pepper if needed.
  6. Serve:
    • Serve the Spicy Pork Chili Verde hot, garnished with extra cilantro if desired. Enjoy it with warm tortillas, over rice, or alongside beans.

Spicy Pork Chili Verde is a bold and flavorful dish that brings the taste of traditional Mexican cuisine to your kitchen. The tender pork and vibrant, zesty sauce make it a perfect meal for any occasion, offering a satisfying combination of heat and richness.
