Crab Deviled Eggs

  • 4 ounces fresh or canned crab meat, drained and flaked

Instructions:

  1. Cook the Eggs:
    • Place the eggs in a single layer in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let the eggs sit for 10-12 minutes. Drain and transfer the eggs to a bowl of ice water to cool completely.
  2. Prepare the Eggs:
    • Once cooled, peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a small mixing bowl. Set the egg whites aside on a serving platter.
  3. Make the Filling:
    • Mash the egg yolks with a fork until smooth. Add the mayonnaise, Dijon mustard, lemon juice, and Old Bay seasoning. Mix until well combined. Gently fold in the flaked crab meat and chopped chives. Season with salt and freshly ground black pepper to taste.
  4. Fill the Eggs:
    • Spoon or pipe the crab mixture back into the egg white halves, dividing the filling evenly.
  5. Garnish and Serve:
    • Garnish each deviled egg with a sprinkle of paprika and additional chopped chives if desired. Serve immediately, or cover and refrigerate until ready to serve.
