Ingredients:

  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon

  • 3 large eggs, separated
  • 1 cup mascarpone cheese

  • 24 ladyfingers
  • Unsweetened cocoa powder, for dusting

Instructions:

  1. Prepare the Pumpkin Mixture: In a medium bowl, combine the pumpkin puree, cinnamon, nutmeg, ginger, and cloves. Mix well and set aside.
  2. Make the Mascarpone Filling: In a large bowl, beat the egg yolks and sugar together until pale and creamy. Add the mascarpone cheese and vanilla extract, beating until smooth. Stir in the pumpkin mixture until well combined.
  3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the pumpkin mascarpone mixture.
  4. Prepare the Espresso: In a shallow dish, combine the cooled espresso and coffee liqueur (if using).
  5. Assemble the Tiramisu: Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy. Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch baking dish or trifle dish. Spread half of the pumpkin mascarpone mixture over the ladyfingers.
