Bean Quesadillas

Ingredients:

  • 1 can (15 ounces) black beans or pinto beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter

Instructions:

  1. Prepare the filling: In a medium bowl, mash the beans slightly with a fork, leaving some beans whole for texture. Stir in the shredded cheddar cheese, salsa, cilantro (if using), ground cumin, and chili powder until well combined.
  2. Assemble the quesadillas: Lay out the tortillas on a flat surface. Divide the bean mixture evenly among the tortillas, spreading it over one half of each tortilla. Fold the other half of the tortilla over the filling to create a half-moon shape.
  3. Cook the quesadillas: Heat a large skillet over medium heat and add a little olive oil or butter. Place one or two quesadillas in the skillet (depending on the size of your pan) and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
