Instructions

  1. Activate the Yeast: In a small bowl, mix the warm water with honey or maple syrup. Sprinkle the yeast on top and let it sit for 5-10 minutes, or until the mixture becomes foamy.
  2. Mix the Dough: In a large mixing bowl, combine the whole wheat flour, salt, and dry milk powder (if using). Stir in the olive oil or melted butter and the activated yeast mixture. Mix until a dough forms.
  3. Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  4. First Rise: Place the dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.
  5. Shape the Loaf: Punch down the dough and shape it into a loaf. Place the loaf in a greased 9×5-inch loaf pan.
  6. Second Rise: Cover the loaf with a towel and let it rise for another 30-45 minutes, or until it has risen just above the edge of the pan.
  7. Bake the Bread: Preheat your oven to 375°F (190°C). Bake the loaf for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped. If the top browns too quickly, tent it with foil during the last 10 minutes of baking.
