Whole Wheat Potato Rolls

Ingredients:

  • 1 cup mashed potatoes (cooled)
  • 2 cups whole wheat flour

  • 2 1/4 tsp active dry yeast
  • 1/4 cup honey or sugar
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp salt
  • 2 tbsp olive oil (for brushing)

Instructions:

  1. In a small bowl, dissolve the yeast and honey (or sugar) in warm milk. Let it sit for 5-10 minutes until the yeast becomes frothy.
  2. In a large mixing bowl, combine the mashed potatoes, melted butter, egg, and salt. Mix well.
  3. Add the whole wheat flour and all-purpose flour to the potato mixture, followed by the yeast mixture. Stir until a dough forms.
  4. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, add more flour as needed.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and divide it into 12 equal portions. Shape each portion into a round roll and place them on a greased baking sheet.
  7. Cover the rolls with a towel and let them rise for another 30-45 minutes.
  8. Preheat your oven to 375°F (190°C). Brush the tops of the rolls with olive oil.
  9. Bake for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped.
  10. Remove from the oven and let them cool slightly before serving.
