Ingredients

  • 1-2 chili peppers, finely chopped (adjust to taste)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tomatoes, chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 1 tablespoon tomato paste
  • 1 cup (240ml) coconut milk
  • 1 tablespoon lime juice
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Prepare the Shrimp: Season the shrimp with salt, pepper, and half of the paprika, cumin, and coriander. Set aside.
  2. Sauté Aromatics: Heat the vegetable oil in a large skillet over medium heat. Add the onion, garlic, ginger, and chili peppers. Sauté for about 3-4 minutes until the onion is translucent and the mixture is fragrant.
  3. Cook Vegetables: Add the sliced bell peppers and tomatoes to the skillet. Cook for another 5 minutes until the vegetables are softened.
  4. Add Spices and Tomato Paste: Stir in the remaining paprika, cumin, and coriander, along with the tomato paste. Cook for 2 minutes, allowing the spices to release their aroma.
  5. Simmer with Coconut Milk: Pour in the coconut milk and stir well. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld together.
  6. Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook for 4-5 minutes until the shrimp are pink and cooked through.
  7. Finish and Serve: Stir in the lime juice and adjust seasoning with salt and pepper. Garnish with chopped cilantro before serving.
