VEGGIE ENCHILADAS

Veggie Enchiladas are a delicious and hearty dish packed with fresh vegetables, beans, and rich Mexican flavors, all wrapped in soft tortillas and smothered with a flavorful enchilada sauce. This vegetarian-friendly meal is satisfying and full of nutrients, making it a perfect choice for meatless Mondays or any time you’re craving a flavorful, wholesome meal. Topped with melted cheese and garnished with fresh cilantro or avocado, these enchiladas are sure to become a family favorite.

Ingredients:

  • 8 small tortillas (corn or flour)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 1 zucchini, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, avocado, and sour cream for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the veggies: Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell peppers, and zucchini, and sauté for 5-7 minutes until softened. Add the corn, black beans, cumin, chili powder, salt, and pepper, and cook for another 2-3 minutes. Remove from heat.
  3. Assemble the enchiladas: Spread a few tablespoons of enchilada sauce in the bottom of the prepared baking dish. Spoon a portion of the veggie mixture onto each tortilla, sprinkle with a bit of cheese, and roll them up tightly. Place the rolled enchiladas seam-side down in the dish.
  4. Top with sauce and cheese: Pour the remaining enchilada sauce over the top of the enchiladas, making sure they are fully covered. Sprinkle the remaining shredded cheese on top.
  5. Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 5-10 minutes, or until the cheese is bubbly and golden.
  6. Serve: Garnish the enchiladas with fresh cilantro, avocado slices, and sour cream if desired.
