Vegetarian Stuffed Tomatoes

Ingredients:

  • 6 large ripe tomatoes
  • 1 cup cooked quinoa (or rice, couscous, or bulgur)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 small zucchini, diced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil or parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the tomatoes: Slice the tops off the tomatoes and carefully scoop out the pulp and seeds with a spoon. Set the tomato shells aside and chop the tomato pulp.
  3. Cook the filling: In a large skillet, heat the olive oil over medium heat. Sauté the onion and garlic until softened, about 3-4 minutes. Add the diced zucchini and cook for another 3-4 minutes until tender. Stir in the chopped tomato pulp, cooked quinoa, oregano, red pepper flakes (if using), and salt and pepper. Cook for 2-3 minutes to allow the flavors to combine.
  4. Add the cheese: Remove the skillet from heat and stir in the Parmesan and feta cheeses until well combined.
  5. Stuff the tomatoes: Fill each tomato shell with the quinoa and vegetable mixture, pressing the filling down gently to pack it in.
  6. Bake: Place the stuffed tomatoes in a greased baking dish. Drizzle a little olive oil over the top of each tomato and bake for 20-25 minutes, or until the tomatoes are tender and the tops are golden.
  7. Serve: Garnish the stuffed tomatoes with freshly chopped basil or parsley and serve warm.
