Ingredients:

  • 2 tablespoons vegetable oil (or sesame oil for added flavor)
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, sliced into rounds
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 medium carrot, julienned
  • 1/2 cup mushrooms, sliced
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish

Instructions:

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, honey or maple syrup, and rice vinegar. Set aside.
  2. Cook the vegetables: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the onion and cook for 2-3 minutes until it starts to soften. Add the garlic and ginger, cooking for another 1-2 minutes until fragrant.
  3. Stir fry the veggies: Add the bell pepper, zucchini, broccoli, snap peas, carrots, and mushrooms to the pan. Stir fry for 5-7 minutes until the vegetables are crisp-tender, adjusting the heat as needed.
  4. Add the sauce: Pour the prepared sauce over the vegetables. If you want a thicker sauce, stir in the cornstarch mixture at this point. Cook for another 2-3 minutes, stirring to coat the vegetables evenly with the sauce.
  5. Serve: Remove from heat and serve over cooked rice or noodles. Garnish with sesame seeds and chopped green onions for an extra layer of flavor.

Enjoy your delicious, healthy vegetarian stir fry!
