Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound cooked turkey, shredded
  • 1 (15-ounce) can hominy, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes
  • 4 cups chicken or turkey broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

  • Shredded cabbage (for garnish)

Instructions:

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
