Turkey Pasta Supreme

Ingredients:

  • 12 oz pasta (penne, rotini, or your choice)
  • 1 tablespoon olive oil
  • 1 pound ground turkey (or leftover turkey, shredded)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup heavy cream or half-and-half
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Cook the Turkey and Vegetables:
    • In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through. Add the diced onion and garlic, and sauté for 2-3 minutes until softened.

  4. Combine and Bake:
    • Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked pasta with the turkey mixture, stirring until well coated.
    • Transfer the pasta to a greased 9×13-inch baking dish. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese on top is melted and bubbly.
  6. Serve:
    • Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley if desired.
