Ingredients:

  • 1 pound turkey breast, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • Warm tortillas for serving
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro, lime wedges

Instructions:

  1. Marinate the Turkey: In a large bowl, combine the olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the turkey strips and toss to coat evenly. Cover and let the turkey marinate for at least 15 minutes, or up to 1 hour for more intense flavor.
  2. Cook the Vegetables: In a large skillet, heat a little more olive oil over medium-high heat. Add the sliced bell peppers and onion to the skillet and sauté for about 5-7 minutes, or until the vegetables are softened and slightly charred. Remove the vegetables from the skillet and set them aside.
  3. Cook the Turkey: In the same skillet, add the marinated turkey strips. Cook over medium-high heat for about 4-6 minutes, or until the turkey is cooked through and no longer pink. Return the sautéed vegetables to the skillet and stir everything together, cooking for an additional 2 minutes to combine the flavors.
  4. Serve: Warm the tortillas according to package instructions. Serve the turkey and vegetable mixture in the warm tortillas, with your choice of optional toppings like sour cream, guacamole, salsa, shredded cheese, fresh cilantro, and lime wedges.

Enjoy these Turkey Fajitas as a delicious and healthy meal that’s bursting with flavor and color!
