Trout Tacos

Trout Tacos are a fresh and flavorful twist on traditional fish tacos, offering a lighter yet richly satisfying meal. Ingredients:

For the Trout:

  • 1 lb trout fillets, skin removed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika

  • Salt and pepper, to taste
  • Juice of 1 lime

For the Lime Slaw:

  • 2 cups shredded green cabbage
  • 1/2 cup shredded red cabbage
  • 1/4 cup shredded carrots
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Chipotle Crema:

  • 1/2 cup sour cream or Greek yogurt
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt, to taste

For Serving:

  • 8 small corn or flour tortillas
  • Fresh cilantro, chopped
  • Lime wedges

Instructions:

  1. Prepare the Trout:
    • Preheat your grill or stovetop grill pan over medium-high heat.
    • In a small bowl, mix the olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
    • Rub the spice mixture all over the trout fillets.
    • Grill the trout for about 3-4 minutes per side or until it flakes easily with a fork. Squeeze lime juice over the cooked trout, then flake the fish into bite-sized pieces.
  2. Make the Lime Slaw:
    • In a large bowl, combine the shredded green cabbage, red cabbage, shredded carrots, and cilantro.

    • Warm the tortillas in a dry skillet or on the grill until pliable.
    • Place a portion of the flaked trout onto each tortilla.
    • Top with a generous scoop of lime slaw.
    • Drizzle with chipotle crema and garnish with fresh cilantro.
