Tofu Stir-fry

Ingredients

  • 1 block (14 oz) firm or extra-firm tofu, drained and cubed
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp cornstarch (for crispy tofu)
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 2 tbsp soy sauce (for the sauce)
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce or sesame oil (optional for flavor)
  • 1/4 cup water
  • 1 tsp chili flakes (optional for heat)
  • Sesame seeds and green onions for garnish

Instructions

  1. Prepare the tofu: Pat the tofu dry with paper towels and cut it into cubes. Toss the tofu in 1 tablespoon of soy sauce and then coat with cornstarch. This will help make the tofu crispy when cooked.
  2. Cook the tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for 5-7 minutes, turning occasionally, until golden and crispy on all sides. Remove from the pan and set aside.
  3. Stir-fry the vegetables: In the same pan, add the red bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp. Add the minced garlic and ginger, and stir-fry for another minute.
  4. Make the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce (if using), water, and chili flakes. Pour the sauce over the vegetables and stir to coat.
  5. Combine the tofu: Return the crispy tofu to the pan and toss everything together, cooking for an additional 2-3 minutes to heat through and allow the flavors to meld.
  6. Serve: Garnish the stir-fry with sesame seeds and sliced green onions, and serve over rice or noodles.
