Ingredients:

  • 1 cup small pasta (such as ditalini, orzo, or small shells)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions:

  1. Toast the Pasta:
    • In a large pot, heat 1 tablespoon of olive oil over medium heat.
    • Add the pasta and stir frequently, toasting it until it turns golden brown. This should take about 5-7 minutes. Be careful not to burn the pasta.
    • Once toasted, remove the pasta from the pot and set it aside.
  2. Sauté the Vegetables:
    • In the same pot, add the remaining tablespoon of olive oil.
    • Sauté the diced onion, garlic, carrots, celery, and zucchini over medium heat until they start to soften, about 5 minutes.
  3. Simmer the Soup:
    • Add the broth, thyme, oregano, salt, and pepper to the pot.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, allowing the vegetables to cook through.
  4. Add the Toasted Pasta:
    • Stir in the toasted pasta and continue to simmer for another 8-10 minutes, or until the pasta is cooked al dente.
  5. Finish and Serve:
    • Stir in the lemon juice to brighten the flavors.
    • Taste and adjust the seasoning if necessary.
    • Ladle the soup into bowls, garnish with fresh parsley, and sprinkle with grated Parmesan cheese if desired.

Enjoy your warm, flavorful Toasted Pasta Soup as a comforting dish on a cool day!
