Ingredients

  • 4 salmon fillets (about 6 ounces each)

  • Salt and pepper to taste
  • 2 cups cooked white or brown rice
  • 1 cup broccoli florets
  • 1 cup carrot slices
  • 1 cup shelled edamame
  • 1/4 cup sliced green onions
  • Sesame seeds for garnish

Instructions

  1. Make the Teriyaki Sauce: In a small saucepan, combine soy sauce, mirin, honey or brown sugar, rice vinegar, sesame oil, garlic, and ginger. Bring to a simmer over medium heat. If using, stir in the cornstarch mixture and continue to cook until the sauce thickens slightly. Remove from heat and set aside.
  2. Prepare the Salmon: Pat the salmon fillets dry with paper towels and season with salt and pepper.
