Tequila Lime Shrimp Zoodles

Tequila Lime Shrimp Zoodles is a vibrant, light dish that combines the bold flavors of shrimp marinated in tequila and lime with the healthy, fresh crunch of zucchini noodles. This dish is perfect for those looking for a low-carb alternative to traditional pasta while still indulging in the tangy, savory elements of Mexican cuisine. The shrimp absorbs the bright citrusy flavors and gets a subtle kick from the tequila, which is balanced by the mild, fresh taste of zoodles. It’s a quick and delicious dinner that feels gourmet but is easy to prepare.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 3 medium zucchinis, spiralized
  • 1/4 cup tequila
  • 2 tbsp lime juice (about 2 limes)
  • 1 tsp lime zest
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving

Instructions:

  1. In a medium bowl, whisk together tequila, lime juice, lime zest, garlic, chili powder, cumin, salt, and pepper. Add the shrimp and marinate for 15-20 minutes.
  2. Heat olive oil in a large skillet over medium heat. Remove the shrimp from the marinade, reserving the liquid, and cook the shrimp for 2-3 minutes on each side until pink and fully cooked. Transfer shrimp to a plate.
  3. In the same skillet, add the reserved marinade and let it simmer for 1-2 minutes until it slightly reduces.
  4. Add the zucchini noodles to the skillet and sauté for 2-3 minutes, until just tender.
  5. Return the shrimp to the skillet, toss to combine with the zoodles and sauce, and cook for another minute.
  6. Garnish with fresh cilantro and serve with lime wedges on the side.

Enjoy this light, flavorful dish with a refreshing tequila-lime kick!
