Tartufo is a decadent Italian dessert, perfect for those who love the combination of chocolate, nuts, and ice cream. Traditionally, it features a rich, chocolate-coated ball of ice cream with a surprise center of fruit or liqueur-infused ganache. Ingredients:

  • ½ cup chocolate ganache or Nutella

  • 1 cup dark chocolate, melted
  • ¼ cup unsweetened cocoa powder or chocolate shavings (for coating)
  • Optional: Maraschino cherries, liqueur (like Amaretto or Grand Marnier)

Instructions:

  1. Prepare the Ice Cream Centers:
    • Scoop out small balls of ice cream using an ice cream scoop. Flatten each ball slightly and place a teaspoon of chocolate ganache, Nutella, or a maraschino cherry in the center.
    • Carefully fold the ice cream around the filling, forming a smooth ball. Place each ball on a baking sheet lined with parchment paper and freeze for at least 1 hour or until firm.
  2. Coat the Ice Cream:
    • Once the ice cream balls are firm, dip each one into the melted chocolate, ensuring it is fully coated. You can use a spoon to help cover the ice cream completely.
    • Immediately roll the coated ice cream ball in chopped nuts, cocoa powder, or chocolate shavings for added texture and flavor.
  3. Freeze the Tartufo:
    • Place the coated Tartufo balls back on the parchment-lined baking sheet and freeze again for at least 2 hours, or until the chocolate coating is fully set.
  4. Serve:
    • Before serving, let the Tartufo sit at room temperature for a few minutes to soften slightly. Serve the Tartufo whole or cut in half to reveal the surprise center.
