Ingredients:

  • 12 oz egg noodles or pasta of your choice
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sour cream, green onions, diced avocado, jalapeños

Instructions:

  1. Cook the Noodles:
    • Preheat your oven to 350°F (175°C). Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Beef Mixture:
    • In a large skillet, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is soft, about 7-8 minutes. Drain any excess fat.
    • Stir in the taco seasoning, diced tomatoes with green chilies, black beans, corn, and salsa. Cook for another 5 minutes until everything is heated through and well combined.
  3. Mix the Casserole:
    • In a large mixing bowl, combine the cooked noodles, sour cream, and 1 cup of shredded cheddar cheese. Stir in the beef mixture and mix until evenly combined.
  4. Assemble the Casserole:
    • Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining 1 cup of cheddar cheese and the Monterey Jack cheese evenly over the top.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese on top is melted and bubbly.
  6. Serve:
    • Garnish with chopped fresh cilantro and your favorite taco toppings, such as sour cream, green onions, diced avocado, or jalapeños.

Enjoy your Taco Noodle Casserole, a delicious and comforting dish that’s perfect for any occasion!
