  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil

  • Salt and pepper, to taste
  • 1 tablespoon fresh thyme leaves (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Carrots:
    • In a large bowl, toss the carrot sticks with olive oil, honey or maple syrup, ground cinnamon (if using), salt, and pepper until evenly coated.
  3. Roast the Carrots:
    • Spread the carrots in a single layer on a baking sheet lined with parchment paper or a silicone baking mat.
    • Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
  4. Add Fresh Herbs (Optional):
