Ingredients:

  • 2 large sweet potatoes (about 2 cups mashed)
  • 1/2 cup apple cider or apple juice
  • 1/4 cup brown sugar (adjust to taste)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Cook the Sweet Potatoes:
    • Peel and cube the sweet potatoes. Place them in a large pot and cover with water. Bring to a boil over medium-high heat and cook until the sweet potatoes are tender, about 15-20 minutes.
    • Drain the sweet potatoes and mash them until smooth. You should have about 2 cups of mashed sweet potatoes.
  2. Simmer the Sweet Potato Butter:
    • In a medium saucepan, combine the mashed sweet potatoes, apple cider (or apple juice), brown sugar, cinnamon, nutmeg, ginger, cloves, and a pinch of salt.
    • Cook over medium heat, stirring frequently, until the mixture thickens and darkens in color, about 20-30 minutes. The consistency should be smooth and spreadable.
    • Stir in the vanilla extract during the last few minutes of cooking.
  3. Cool and Store:
    • Once the sweet potato butter has thickened, remove it from the heat and let it cool to room temperature.
    • Transfer the sweet potato butter to clean, airtight jars or containers. Store in the refrigerator for up to 2 weeks.
  4. Serve:
    • Enjoy your Sweet Potato Butter spread on toast, biscuits, pancakes, or waffles. It’s also delicious as a topping for oatmeal, yogurt, or ice cream.
