Sweet Potato-Black Bean Quesadillas

  • 8 medium flour tortillas

Instructions:

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, cumin, chili powder, salt, and pepper. Spread them out on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
  2. Prepare the Filling: In a large mixing bowl, combine the roasted sweet potatoes with the black beans, cheese, and cilantro. Mix until well combined.

  4. Cook the Quesadillas: Heat a large skillet over medium heat. Cook the quesadillas one at a time, for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. You can also cook multiple quesadillas at once if you have a large enough skillet or griddle.
