Ingredients

  • 1 loaf (about 1 pound) day-old bread (such as French bread or sourdough), cubed
  • 1/4 cup unsalted butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large eggs
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the bread: Spread the cubed bread on a baking sheet and toast in the oven for 10-15 minutes, or until lightly golden and crisp. Remove from the oven and set aside.
  3. Sauté the vegetables: In a large skillet, melt the butter over medium heat. Add the chopped onion, minced garlic, celery, and mushrooms. Cook for 5-7 minutes, or until the vegetables are softened and fragrant. Stir in the fresh thyme, sage, salt, and black pepper. Remove from heat.
  4. Prepare the custard: In a large bowl, whisk together the eggs, chicken or vegetable broth, and heavy cream until well combined.
  5. Combine ingredients: In the prepared baking dish, combine the toasted bread cubes with the sautéed vegetable mixture. Pour the egg and cream mixture evenly over the top, pressing the bread down gently to soak up the liquid. Sprinkle the grated Parmesan cheese over the top.
  6. Bake the pudding: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the center is set.
  7. Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.

Enjoy your Stuffing Bread Pudding as a comforting and flavorful addition to any meal, providing a delightful twist on classic stuffing with its creamy, custard-like texture and rich taste.
