You can easily customize the filling to suit your taste—whether with Italian-inspired flavors, a Mediterranean twist, or a vegetarian version. Stuffed Zucchini is not only packed with flavor but also a great way to incorporate more vegetables into your meals.

Ingredients:

  • 4 medium zucchinis, halved lengthwise
  • 1 lb ground beef, turkey, or sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup marinara sauce (or tomato sauce)
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan or mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper, to taste
  • Olive oil, for drizzling
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Prepare the Zucchini:
    • Scoop out the center of each zucchini half, leaving about 1/4-inch thick shells. Chop the scooped-out zucchini flesh and set it aside for the filling.
  3. Cook the Filling:
    • In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes. Add the ground meat and cook until browned, breaking it up with a spoon. Stir in the chopped zucchini flesh, marinara sauce, breadcrumbs, oregano, basil, salt, and pepper. Cook for an additional 3-4 minutes until everything is well combined.
  4. Stuff the Zucchini:
    • Spoon the filling mixture into each zucchini half, packing it in evenly. Sprinkle the tops with grated Parmesan or mozzarella cheese.
  5. Bake:
    • Place the stuffed zucchinis in the prepared baking dish and drizzle lightly with olive oil. Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and golden.
  6. Serve:
    • Garnish with fresh parsley or basil and serve hot. Enjoy as a main course with a side salad or as a savory appetizer.

Stuffed Zucchini offers a flavorful, nutrient-packed meal that’s easy to prepare and perfect for showcasing the freshness of zucchini. It’s a wholesome, satisfying dish that everyone will enjoy!
