Strawberry Cheesecake Pie

Strawberry Cheesecake Pie is a luscious, indulgent dessert that combines the smooth creaminess of cheesecake with the freshness of ripe strawberries, all encased in a buttery, crisp pie crust. It’s the perfect blend of tangy and sweet, with a rich, velvety filling that contrasts beautifully with the bright strawberry topping. This pie is ideal for special occasions or when you just want to treat yourself and your loved ones to something truly delicious.

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

For the strawberry topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C).
  2. Make the crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Bake the crust for 8-10 minutes until lightly golden, then set aside to cool.
  3. Prepare the cheesecake filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully combined.
  4. Assemble the pie: Pour the cheesecake filling into the cooled crust and smooth the top with a spatula. Bake for 30-35 minutes, or until the center is just set and slightly jiggles.
  5. Cool the cheesecake: Allow the cheesecake to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight to set completely.
  6. Make the strawberry topping: In a medium saucepan, combine the sliced strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries release their juices and soften, about 5-7 minutes. If a thicker topping is desired, stir in the cornstarch mixture and cook for another 2 minutes until thickened. Let the topping cool to room temperature.
  7. Top and serve: Once the cheesecake pie has chilled, spoon the strawberry topping evenly over the top. Serve chilled and enjoy!

This Strawberry Cheesecake Pie is a stunning dessert that’s as delicious as it is beautiful, making it a perfect centerpiece for any celebration.
