Squash Blossom Quesadillas are a delightful and unique twist on the traditional quesadilla, showcasing the delicate flavor of squash blossoms. These edible flowers, often found in Mexican cuisine, add a subtle sweetness and a beautiful color to the dish. Combined with melted cheese and a hint of spice, these quesadillas offer a fresh and seasonal take on a classic comfort food. Perfect for a light lunch or as an appetizer, they are both visually appealing and incredibly tasty.
Ingredients:
- 8 fresh squash blossoms, stems removed
- 4 large flour tortillas
- 1 ½ cups shredded Oaxaca or mozzarella cheese
- 1 small jalapeño, thinly sliced (optional)
- 1 small onion, thinly sliced
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
- Salsa or sour cream for serving
Instructions:
- Prepare the squash blossoms: Gently rinse the squash blossoms under cold water and pat them dry. Remove the stems and any tough parts from the inside of the blossoms.
- Sauté the onions and jalapeños: In a skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the sliced onion and jalapeño (if using) and sauté until softened and slightly caramelized, about 5 minutes. Season with a pinch of salt and pepper. Remove from the skillet and set aside.
- Assemble the quesadillas: Lay out two tortillas on a flat surface. Sprinkle half of the shredded cheese evenly over each tortilla. Arrange the squash blossoms on top of the cheese, followed by the sautéed onions and jalapeños. Sprinkle the remaining cheese over the top, then place the other two tortillas on top to create a sandwich.
- Cook the quesadillas: Wipe the skillet clean and add the remaining olive oil or butter. Heat over medium heat, then carefully add one of the assembled quesadillas to the skillet. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla.
- Slice and serve: Remove the quesadillas from the skillet and let them cool slightly before cutting them into wedges. Garnish with fresh cilantro and serve with salsa or sour cream on the side.
These Squash Blossom Quesadillas are a perfect way to celebrate the flavors of the season, offering a delicious combination of crispy tortillas, gooey cheese, and the unique taste of squash blossoms. Enjoy them as a snack, appetizer, or light meal!
