Ingredients:

  • 2 cups dried split peas, rinsed and sorted

  • 1 ham hock or 1 cup diced ham (optional for a smoky flavor)
  • 6 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Rinse and sort the split peas to remove any debris. Set aside.
  2. Sauté the Vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.
  3. Add the Garlic:
    • Add the minced garlic to the pot and sauté for another 1-2 minutes until fragrant.
  4. Combine and Simmer:
    • Add the rinsed split peas, ham hock or diced ham (if using), chicken or vegetable broth, bay leaves, and dried thyme to the pot. Stir to combine.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 to 1 1/2 hours, stirring occasionally, until the peas are tender and the soup has thickened. If the soup becomes too thick, add more broth or water to reach your desired consistency.
  5. Season:
    • Remove the bay leaves and ham hock (if used). If you used a ham hock, shred any remaining meat and return it to the soup.
    • Season with salt and pepper to taste.
  6. Serve:
    • Ladle the soup into bowls and garnish with chopped fresh parsley.
