The spinach adds a light, earthy taste that perfectly complements the cheese and pasta layers, making it a crowd-pleaser for any gathering. Whether you’re serving it for a family dinner or a special occasion, spinach lasagna is a wholesome dish that will leave everyone asking for seconds.
Ingredients:
- 12 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
- 1 jar (24 oz) marinara sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/4 tsp ground nutmeg (optional)
Instructions:
- Preheat oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Add the spinach and cook until wilted (if using fresh), about 3 minutes. Season with salt, pepper, and nutmeg (if using). Remove from heat and let cool slightly.
- In a medium bowl, mix together the ricotta cheese, egg, half of the mozzarella, half of the Parmesan, and the cooked spinach until well combined.
- Assemble the lasagna: Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish. Layer 3 lasagna noodles on top. Spread 1/3 of the spinach-ricotta mixture over the noodles, then top with a layer of marinara sauce. Repeat this process for two more layers.
- For the final layer, place the remaining noodles on top, cover with the remaining marinara sauce, and sprinkle with the remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
