Spinach Lasagna

Spinach lasagna is a hearty and comforting dish that offers a delicious twist on the traditional recipe. By layering spinach with creamy ricotta cheese, mozzarella, and a rich marinara sauce, this vegetarian option is both satisfying and flavorful. Ingredients:

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
  • 1 jar (24 oz) marinara sauce
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 tsp ground nutmeg (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Add the spinach and cook until wilted (if using fresh), about 3 minutes. Season with salt, pepper, and nutmeg (if using). Remove from heat and let cool slightly.
  4. In a medium bowl, mix together the ricotta cheese, egg, half of the mozzarella, half of the Parmesan, and the cooked spinach until well combined.
  5. Assemble the lasagna: Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish. Layer 3 lasagna noodles on top. Spread 1/3 of the spinach-ricotta mixture over the noodles, then top with a layer of marinara sauce. Repeat this process for two more layers.
  6. For the final layer, place the remaining noodles on top, cover with the remaining marinara sauce, and sprinkle with the remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for 10 minutes before slicing and serving.
