Ingredients:

  • 24 large white or cremini mushrooms
  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1/2 cup frozen spinach, thawed and drained
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and freshly ground black pepper to taste
  • 1/4 cup breadcrumbs (optional, for topping)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth. Remove the stems and use a small spoon to hollow out the center of each mushroom cap slightly, creating space for the filling. Place the mushroom caps on the prepared baking sheet.
  3. Cook the Aromatics: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat and set aside.
  4. Make the Spinach Dip Filling: In a medium bowl, combine the softened cream cheese, thawed and drained spinach, sautéed onions and garlic, Parmesan cheese, mozzarella cheese, ground nutmeg, salt, and pepper. Mix until well combined and creamy.
  5. Stuff the Mushrooms: Spoon the spinach dip mixture into each mushroom cap, filling them generously. If desired, sprinkle the tops with breadcrumbs for added texture.
  6. Bake: Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
  7. Garnish and Serve: Remove the mushrooms from the oven and let them cool slightly. Garnish with fresh parsley if desired, and serve warm.

These Spinach Dip-Stuffed Mushrooms are a crowd-pleasing appetizer that’s easy to make and full of flavor. Their creamy, cheesy filling pairs perfectly with the tender mushrooms, making them a delightful addition to any gathering. Enjoy!
