Ingredients:

  • 6 large eggs, hard-boiled and peeled
  • 1/2 cup fresh spinach leaves, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • Paprika, for garnish
  • Fresh chives, chopped (for garnish, optional)

Instructions:

  1. Prepare the Eggs: Slice the hard-boiled eggs in half lengthwise. Carefully remove the yolks and place them in a medium-sized bowl. Set the egg whites aside on a serving platter.
  2. Cook the Spinach: In a small skillet, sauté the chopped spinach over medium heat for 2-3 minutes, just until wilted. Remove from heat and allow it to cool slightly.
  3. Make the Filling: Add the wilted spinach, mayonnaise, Dijon mustard, minced garlic, and lemon juice to the bowl with the egg yolks. Mash the mixture together with a fork until smooth. Season with salt and black pepper to taste.
  4. Fill the Egg Whites: Spoon or pipe the spinach yolk mixture back into the egg white halves, filling them generously.
  5. Garnish and Serve: Lightly sprinkle the tops of the deviled eggs with paprika. Garnish with chopped fresh chives, if desired. Serve immediately or refrigerate until ready to serve.

Spinach Deviled Eggs offer a fresh and flavorful variation on the classic recipe, with the added benefits of spinach for a nutritious boost.
