Spicy Roasted Carrot Hummus

  • 4 large carrots, peeled and cut into chunks

  • Salt and freshly ground black pepper, to taste
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1/4 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 tablespoons water (more as needed)
  • 2 tablespoons extra virgin olive oil (for blending)
  • Fresh parsley, chopped for garnish
  • Red pepper flakes, for garnish (optional)

Instructions:

  1. Roast the Carrots:
    • Preheat your oven to 400°F (200°C).
    • In a bowl, toss the carrot chunks with olive oil, ground cumin, smoked paprika, ground coriander, cayenne pepper, salt, and freshly ground black pepper.
    • Spread the seasoned carrots on a baking sheet in a single layer.
    • Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized. Remove from the oven and let cool slightly.
  2. Blend the Hummus:

  3. Serve:

    • Garnish with freshly chopped parsley and a sprinkle of red pepper flakes if desired.
