Spicy Pumpkin Pork Noodles

Ingredients:

  • 8 oz (225g) rice noodles or your preferred noodle type
  • 1 lb (450g) pork tenderloin, thinly sliced
  • 1 cup pumpkin purée
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons chili garlic sauce (adjust to taste)
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper, to taste

Instructions:

  1. Cook the noodles: Cook the noodles according to the package instructions. Drain and set aside.
