Ingredients:

  • For the Filling:
    • 1 pound ground beef
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 can (15 ounces) black beans, drained and rinsed
    • 1 can (15 ounces) kidney beans, drained and rinsed
    • 1 can (10 ounces) diced tomatoes with green chilies
    • 1 jalapeño, seeded and finely chopped (optional, for heat)
    • 2 tablespoons tomato paste
    • 1 tablespoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • Salt and black pepper, to taste
    • 1/2 cup shredded cheddar cheese
  • For the Crust:
    • 1 package (2 sheets) pre-made pie crusts or homemade pie crust
    • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Filling:
    • In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
    • Add the chopped onion and garlic to the skillet and sauté for 3-4 minutes until softened.
    • Stir in the black beans, kidney beans, diced tomatoes with green chilies, tomato paste, jalapeño (if using), chili powder, cumin, paprika, salt, and black pepper. Cook for another 5-7 minutes, allowing the flavors to meld and the mixture to thicken slightly.
    • Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.
  3. Assemble the Pie:
    • Roll out one sheet of pie crust and fit it into a 9-inch pie dish, allowing the edges to overhang slightly.
    • Spoon the beef and bean filling into the pie crust, spreading it out evenly.
    • Roll out the second sheet of pie crust and place it over the filling. Trim any excess crust and crimp the edges together to seal.
    • Cut a few small slits in the top crust to allow steam to escape.
  4. Brush and Bake:
    • Brush the top crust with the beaten egg to give it a golden, shiny finish.
    • Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.
  5. Serve:
    • Allow the pie to cool for a few minutes before slicing and serving.

Enjoy your Spicy Bean and Beef Pie, a comforting and flavorful dish with just the right amount of heat, perfect for warming up any meal!
