Spiced Candied Pecans

Ingredients:

  • 2 cups pecan halves
  • 1 cup granulated sugar

  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup water

Instructions:

  1. Prepare the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Spices: In a small bowl, mix together the cinnamon, nutmeg, cayenne pepper (if using), and salt. Set aside.
  3. Cook the Sugar Syrup: In a medium-sized saucepan, combine the sugar, water, and vanilla extract. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture begins to simmer.
  4. Add Pecans: Stir in the pecans, ensuring they are fully coated with the sugar syrup. Continue cooking for about 5 minutes, stirring frequently, until the syrup thickens and sticks to the pecans.
  5. Add Spices: Remove the pan from heat and immediately sprinkle the spice mixture over the pecans. Stir well to coat the pecans evenly with the spices.
  6. Bake the Pecans: Spread the pecans in a single layer on the prepared baking sheet. Bake for 15–20 minutes, stirring once halfway through, until the pecans are golden and fragrant.
  7. Cool and Serve: Remove the pecans from the oven and let them cool completely on the baking sheet. Once cooled, they will become crisp. Store in an airtight container for up to two weeks.
