SPAGHETTI CHICKEN PARMESAN

Spaghetti Chicken Parmesan is a classic Italian-American dish that combines crispy breaded chicken, marinara sauce, and melted mozzarella and Parmesan cheese, all served over a bed of tender spaghetti. Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 jar (24 ounces) marinara sauce (or homemade)
  • Fresh basil or parsley, chopped, for garnish

For the Spaghetti:

  • 12 ounces spaghetti
  • Salt, for pasta water
  • Freshly grated Parmesan cheese, for serving

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C). Season the chicken breasts on both sides with salt and freshly ground black pepper.
  2. Bread the Chicken:
    • Set up a breading station with three shallow bowls: one with the flour, one with the beaten eggs, and one with the breadcrumbs mixed with Parmesan cheese.
    • Dredge each chicken breast in the flour, shaking off any excess. Dip it into the egg, then coat it evenly with the breadcrumb mixture, pressing the breadcrumbs onto the chicken to help them adhere.
  3. Cook the Chicken:
    • In a large oven-safe skillet, heat the olive oil and butter over medium-high heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side, or until golden brown. You may need to do this in batches if your skillet isn’t large enough.
    • Pour about 1 cup of marinara sauce over the chicken breasts in the skillet, spreading it evenly. Sprinkle the grated mozzarella cheese over the sauce.
  4. Bake the Chicken:
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the cheese is melted and bubbly.
  5. Cook the Spaghetti:
    • While the chicken is baking, bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain the spaghetti and return it to the pot.
    • Toss the spaghetti with the remaining marinara sauce to coat it evenly.
  6. Serve:
    • Place a portion of spaghetti on each plate. Top with a piece of Chicken Parmesan. Garnish with freshly grated Parmesan cheese and chopped fresh basil or parsley.
