Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream (optional)
  • Tortilla chips or chopped green onions (optional, for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in the chili powder, cumin, garlic powder, salt, and pepper, and cook for another minute until fragrant.
  5. Add the black beans, corn, diced tomatoes with green chilies, and salsa to the skillet. Stir to combine, and let simmer for 5-7 minutes.
