Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (optional, for serving)

Instructions:

  1. Season the Chicken: In a small bowl, combine the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the spice mixture evenly over the chicken breasts.
  2. Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, reduce the heat to medium. Add the black beans, corn, and diced tomatoes with green chilies. Stir and simmer for 5 minutes, allowing the flavors to meld.
  4. Return the Chicken to the Skillet: Place the chicken breasts back into the skillet, nestling them into the vegetable mixture. Sprinkle the shredded cheese over the top and cover with a lid. Cook for 2-3 minutes until the cheese is melted.
  5. Serve: Garnish with fresh cilantro and serve with lime wedges. Enjoy alongside rice, tortillas, or tortilla chips.
