Southwest Beef Stew is a hearty, flavorful dish that combines tender chunks of beef with the bold flavors of the Southwest. Ingredients:

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat, cut into 1-inch cubes

  • 1 can (14.5 ounces) diced tomatoes with green chilies (like Rotel)
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder (or more to taste)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn (or fresh)
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1/4 cup chopped fresh cilantro or parsley (optional, for garnish)
  • Lime wedges, for serving

Instructions:

  1. Brown the Beef:
    • In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Season the beef stew meat with salt and freshly ground black pepper. Add the beef to the pot in batches, browning on all sides. Remove the beef and set it aside.
