Ingredients:

  • 1 lb dried butter beans (or fresh if available)
  • 1 ham hock or 4 slices of thick-cut bacon
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1-2 cups water (as needed)
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste
  • 1 tsp smoked paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Beans: If using dried butter beans, soak them overnight in water. Drain and rinse before cooking.
  2. Cook the Meat: In a large pot or Dutch oven, cook the bacon over medium heat until crispy, or if using a ham hock, add it to the pot with a little oil and cook until browned.
  3. Sauté the Aromatics: Add the diced onion to the pot with the bacon or ham hock, sautéing until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Add the Beans and Broth: Stir in the soaked beans and chicken broth. If the liquid doesn’t fully cover the beans, add additional water. Bring the mixture to a simmer.
  5. Simmer Slowly: Reduce the heat to low, cover, and let the beans cook gently for 1-2 hours, stirring occasionally and adding more water if needed. Cook until the beans are tender and creamy.
  6. Add Butter and Seasoning: Once the beans are fully cooked and tender, stir in the butter, smoked paprika (if using), salt, and pepper to taste. Adjust seasoning as needed.
  7. Serve: Remove the ham hock (if used) and shred any meat into the beans. Garnish with chopped parsley and serve hot, ideally with cornbread or rice.
