SOUR CREAM STREUSEL COFFEE CAKE

Sour Cream Streusel Coffee Cake is a delightful and comforting dessert that pairs perfectly with a cup of coffee or tea. This moist, tender cake is made extra rich with the addition of sour cream, which adds a subtle tang and keeps the cake soft and flavorful. The real star, however, is the cinnamon streusel topping—a crumbly, buttery layer that adds sweetness and a satisfying crunch to each bite. This coffee cake is ideal for breakfast, brunch, or an afternoon snack, and it’s sure to be a hit with family and friends. The combination of soft cake and crunchy streusel makes it a comforting treat that’s hard to resist.

Ingredients:

For the Cake:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Streusel Topping:

  • 1/2 cup light brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed
  • Optional: 1/2 cup chopped nuts (such as pecans or walnuts)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch or 8×8-inch baking pan, or line it with parchment paper for easy removal.
  2. Make the streusel topping: In a small bowl, combine the brown sugar, flour, and cinnamon. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. If using, stir in the chopped nuts. Set the streusel topping aside.
  3. Prepare the cake batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until smooth.
  4. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Assemble the coffee cake: Spread half of the cake batter into the prepared baking pan. Sprinkle half of the streusel topping over the batter. Spread the remaining batter over the streusel layer, then sprinkle the remaining streusel on top.
  6. Bake: Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. The top should be golden brown and the cake should spring back when lightly touched.
  7. Cool and serve: Allow the cake to cool in the pan for about 15 minutes before slicing and serving. Enjoy it warm or at room temperature.

Sour Cream Streusel Coffee Cake is a classic, comforting treat that’s perfect for any occasion, offering a delightful combination of rich flavors and textures that will keep you coming back for more.
