Sorullos de Maíz are a traditional Puerto Rican snack made from cornmeal dough that’s shaped into small sticks and fried to golden perfection. These crispy on the outside, tender on the inside treats are often served as an appetizer or side dish, and can be enjoyed with a variety of dipping sauces, like mayo-ketchup or even melted cheese. With their subtle sweetness and irresistible texture, sorullos are a comforting and satisfying bite-sized snack, perfect for parties or a casual meal.
Ingredients:
- 2 cups water
- 1 1/2 cups cornmeal (masa harina or fine yellow cornmeal)
- 2 tablespoons butter
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 cup shredded cheese (optional, for cheesy sorullos)
- Vegetable oil for frying
Instructions:
- Boil the water: In a medium saucepan, bring the water to a boil. Add the butter, sugar, and salt, stirring until the butter is melted.
- Add the cornmeal: Gradually add the cornmeal to the boiling water, stirring constantly to avoid lumps. Continue stirring over low heat for 3-4 minutes until the mixture thickens and pulls away from the sides of the pan, forming a dough.
- Add cheese (optional): If you’re making cheesy sorullos, fold in the shredded cheese into the dough, stirring until well incorporated.
- Shape the sorullos: Let the dough cool slightly until it’s comfortable to handle. Using your hands, take small portions of the dough and roll them into finger-sized sticks (about 2-3 inches long).
- Fry the sorullos: Heat about 1 inch of vegetable oil in a frying pan over medium heat. Once the oil is hot, carefully place the sorullos into the pan, frying them in batches for about 3-4 minutes, or until golden brown and crispy on the outside.
- Drain and serve: Remove the fried sorullos from the oil and place them on paper towels to drain any excess oil. Serve them hot, with dipping sauces like mayo-ketchup or melted cheese on the side.
These Sorullos de Maíz are crispy, slightly sweet, and utterly delicious—perfect for sharing or snacking on anytime!
