Snickerdoodle Blondies

Snickerdoodle Blondies are a delightful twist on the classic cookie, combining the soft and chewy texture of blondies with the warm, comforting flavors of cinnamon and sugar. These blondies are perfect for those who love the sweet and spicy taste of traditional snickerdoodles but crave something a bit more substantial. With a buttery base and a generous dusting of cinnamon sugar on top, each bite is rich and satisfying. They’re easy to make and perfect for sharing, whether at a family gathering, a holiday party, or as a sweet treat just for yourself.

Ingredients

  • For the Blondies:
    • 1 cup (226g) unsalted butter, melted
    • 1 1/2 cups (300g) granulated sugar
    • 1/2 cup (110g) packed light brown sugar
    • 2 large eggs
    • 1 tablespoon vanilla extract
    • 2 3/4 cups (345g) all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
  • For the Topping:
    • 1/4 cup (50g) granulated sugar
    • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a 9×13-inch (23×33 cm) baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. Prepare the Blondie Batter:
    • In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
    • Add the eggs and vanilla extract, whisking until fully combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  3. Prepare the Topping:
    • In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
  4. Assemble the Blondies:
    • Spread the blondie batter evenly into the prepared baking pan. The batter will be thick, so use a spatula to smooth it out.
    • Sprinkle the cinnamon sugar mixture evenly over the top of the batter.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with just a few moist crumbs.
  6. Cool and Serve:
    • Allow the blondies to cool in the pan on a wire rack. Once cooled, lift them out of the pan using the parchment paper overhang, then cut them into squares.

Enjoy these Snickerdoodle Blondies with a cold glass of milk or a warm cup of coffee for a perfect treat any time of day!
