Ingredients:

  • For the Burritos:
    • 1 lb ground beef
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 packet taco seasoning
    • 1/4 cup water
    • 1 can (15 oz) refried beans
    • 1 can (4 oz) diced green chilies
    • 8 large flour tortillas
    • 2 cups shredded cheddar or Monterey Jack cheese
  • For the Sauce:
    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 2 cups beef broth
    • 1 cup red enchilada sauce
    • 1/2 teaspoon cumin
    • 1/2 teaspoon chili powder
    • Salt and pepper to taste
  • For Topping:
    • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
    • Sliced green onions, for garnish
    • Fresh cilantro, for garnish
    • Sour cream, for serving

Instructions:

  1. Prepare the Filling:
    • In a large skillet, brown the ground beef over medium-high heat until fully cooked, about 5-7 minutes. Drain any excess fat.
    • Add the chopped onion and minced garlic to the beef and cook until the onion is softened, about 3 minutes.
    • Stir in the taco seasoning and 1/4 cup of water. Cook until the mixture thickens, about 2 minutes.
    • Add the refried beans and diced green chilies to the beef mixture. Stir until everything is well combined and heated through. Remove from heat.
  2. Assemble the Burritos:
    • Preheat your oven to 350°F (175°C).

  4. Smother the Burritos:
    • Pour the sauce evenly over the burritos in the baking dish.
    • Sprinkle the remaining 1 cup of shredded cheese over the top.
  5. Bake:
    • Bake the burritos in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Garnish the smothered burritos with sliced green onions, fresh cilantro, and a dollop of sour cream if desired.
