Smoked Sausage, White Bean, and Vegetable Pasta Recipe

Ingredients:

  • 12 oz pasta (penne or rotini work well)
  • 1 lb smoked sausage, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 (15 oz) can white beans (cannellini or great northern), drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-6 minutes. Remove the sausage from the skillet and set it aside.
  3. Cook the Vegetables: In the same skillet, add the diced onion and garlic, cooking until softened and fragrant, about 3 minutes. Add the zucchini and bell pepper, and cook for another 5 minutes, stirring occasionally until the vegetables are tender.
  4. Combine Ingredients: Add the white beans, cherry tomatoes, thyme, red pepper flakes (if using), and the browned sausage back into the skillet. Stir everything together and cook for another 3-4 minutes until the beans are heated through. Season with salt and pepper to taste.
  5. Mix with Pasta: Add the cooked pasta to the skillet and toss to combine all the ingredients. If the mixture is too dry, add a splash of the reserved pasta water or a drizzle of olive oil to loosen it up.
  6. Serve: Divide the pasta into bowls and sprinkle with grated Parmesan cheese and fresh parsley. Serve hot and enjoy this flavorful, filling meal.

This dish is perfect for a cozy dinner with lots of smoky, savory goodness in every bite!
