Ingredients:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 cans (28 oz each) crushed tomatoes
- 1 can (15 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1/2 cup red wine (optional)
- 1 tbsp sugar
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (optional)
- Freshly grated Parmesan cheese, for serving
Instructions:
- In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the crushed tomatoes, tomato sauce, and tomato paste. Stir well to combine. If using, add the red wine and stir until fully incorporated.
- Season the sauce with sugar, oregano, basil, thyme, red pepper flakes, salt, and pepper. Stir to combine all the ingredients.
- Lower the heat to a gentle simmer. Cover the pot, leaving the lid slightly ajar, and let the sauce simmer for 2-3 hours, stirring occasionally. The longer it simmers, the richer the flavor becomes.
- Taste and adjust the seasoning as needed. If desired, stir in fresh parsley just before serving.
- Serve over your favorite pasta, and top with freshly grated Parmesan cheese.
Enjoy the fruits of your slow-simmering labor!
