Slow-Simmering Pasta Sauce

This slow-simmering pasta sauce is a rich, hearty, and comforting dish that transforms simple ingredients into a deeply flavorful sauce. Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 1/2 cup red wine (optional)
  • 1 tbsp sugar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)
  • Freshly grated Parmesan cheese, for serving

Instructions:

  1. In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Pour in the crushed tomatoes, tomato sauce, and tomato paste. Stir well to combine. If using, add the red wine and stir until fully incorporated.
  3. Season the sauce with sugar, oregano, basil, thyme, red pepper flakes, salt, and pepper. Stir to combine all the ingredients.
  4. Lower the heat to a gentle simmer. Cover the pot, leaving the lid slightly ajar, and let the sauce simmer for 2-3 hours, stirring occasionally. The longer it simmers, the richer the flavor becomes.
  5. Taste and adjust the seasoning as needed. If desired, stir in fresh parsley just before serving.
  6. Serve over your favorite pasta, and top with freshly grated Parmesan cheese.
