Slow-Cooker Stuffed Peppers

Slow-Cooker Stuffed Peppers are a comforting, easy-to-make meal that allows the flavors to meld perfectly while requiring minimal effort. These bell peppers are filled with a savory mixture of ground meat, rice, and seasonings, then slowly cooked to tender perfection. The slow-cooker not only simplifies the process but also enhances the flavor, as the peppers soak up the juices from the filling. This dish is ideal for a busy day when you want a wholesome, satisfying meal that’s ready when you are. Plus, it’s versatile—easily customizable with different meats or grains.

Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese (optional)
  • 1 can (8 oz) tomato sauce
  • 1/4 cup water
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set them aside.
  2. Make the Filling: In a large bowl, combine the ground beef or turkey, cooked rice, chopped onion, minced garlic, drained diced tomatoes, oregano, paprika, salt, and pepper. Mix well until everything is evenly distributed.
  3. Stuff the Peppers: Spoon the filling into each pepper, packing it in tightly. Place the stuffed peppers upright in the slow cooker.
  4. Add Sauce: In a small bowl, mix the tomato sauce with 1/4 cup water. Pour this over and around the peppers in the slow cooker.
  5. Cook: Cover and cook on low for 6-7 hours, or until the peppers are tender and the filling is cooked through.
  6. Optional Cheese: If using cheese, sprinkle it over the peppers in the last 30 minutes of cooking and allow it to melt.
  7. Serve: Garnish with fresh parsley if desired, and serve warm.

These Slow-Cooker Stuffed Peppers are a hearty, satisfying dish that’s perfect for family dinners or meal prep!
