Ingredients:

  • 1 lb dried pinto beans, sorted and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and chopped (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups water or low-sodium chicken broth
  • 1 ham hock or 4 strips of bacon (optional, for added flavor)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Beans:
    • Sort through the dried pinto beans to remove any debris or damaged beans. Rinse the beans thoroughly under cold water.
  2. Combine Ingredients:
    • In the slow cooker, combine the rinsed beans, chopped onion, minced garlic, jalapeño (if using), ground cumin, chili powder, smoked paprika, salt, and black pepper. Add the ham hock or bacon if desired.
  3. Add Liquid:
    • Pour the water or chicken broth into the slow cooker, making sure the beans are fully submerged.
  4. Cook the Beans:
    • Cover and cook on low for 8-10 hours, or on high for 5-6 hours, until the beans are tender and fully cooked. Check the beans occasionally and add more water or broth if needed to keep them covered.
  5. Season and Serve:
