SLOW COOKER PEACH COBBLER

Slow Cooker Peach Cobbler is an effortless, comforting dessert that brings together juicy peaches and a buttery, cake-like topping, all cooked to perfection in a slow cooker. This recipe allows the peaches to become tender and juicy, while the topping turns golden and slightly crispy around the edges. It’s the perfect set-and-forget dessert, making it ideal for gatherings or whenever you want a warm, sweet treat without much fuss. Serve it with a scoop of vanilla ice cream or whipped cream for the ultimate comfort dessert.

Ingredients:

For the peach filling:

  • 6 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (for thickening)

For the topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the peach filling: In a large mixing bowl, combine the sliced peaches (fresh or canned), granulated sugar, brown sugar, cinnamon, vanilla extract, lemon juice, and cornstarch. Toss until the peaches are well-coated. Set aside.
  2. Make the topping: In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until a smooth batter forms.
  3. Assemble the cobbler: Lightly grease the inside of your slow cooker with butter or cooking spray. Pour the peach filling evenly into the bottom of the slow cooker. Spoon the batter over the peaches, spreading it gently to cover the fruit (it doesn’t need to be perfect).
  4. Cook the cobbler: Cover the slow cooker and cook on high for 2-3 hours, or on low for 4-6 hours, until the topping is golden brown and the peaches are bubbling.
  5. Serve: Once the cobbler is done, let it cool slightly before serving. Scoop the cobbler into bowls and top with vanilla ice cream or whipped cream for extra indulgence.

This Slow Cooker Peach Cobbler is a sweet and simple dessert that’s perfect for any occasion. The warm, gooey peaches and soft, buttery topping make for a delicious, crowd-pleasing treat!
