These creamy and indulgent mashed potatoes are perfect for holidays, potlucks, or any time you want a comforting side dish with minimal effort. The slow-cooker does most of the work, allowing you to focus on other dishes or simply enjoy the day while the potatoes cook to perfection.
Ingredients:
- 3 lbs russet potatoes, peeled and cut into chunks
- 4 cloves garlic, minced
- 1/2 cup unsalted butter, cubed
- 1 cup chicken broth
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- Salt and pepper, to taste
Instructions:
- Prepare the potatoes: Add the peeled and cut potatoes to the slow-cooker. Pour in the chicken broth and scatter the minced garlic and butter over the potatoes.
- Cook the potatoes: Cover and cook on high for 3-4 hours or on low for 6-7 hours, until the potatoes are tender and easily mashed with a fork.
- Mash the potatoes: Once the potatoes are cooked, use a potato masher or electric mixer to mash them right in the slow-cooker until smooth and creamy.
- Add the toppings: Stir in the sour cream, 1 cup of shredded cheddar cheese, and salt and pepper to taste. Mix until everything is well combined.
- Top and serve: Sprinkle the top with the remaining 1/2 cup of cheddar cheese, bacon crumbles, and chopped green onions. Cover and cook for an additional 5-10 minutes to allow the cheese to melt.
Serve warm and enjoy this rich and flavorful twist on mashed potatoes!
